Ingredients

  • 1/2 English cucumber, thinly sliced
  • 20 fresh mint leaves
  • 2 tsp honey (or agave for vegan)
  • 2 tbsp fresh lime juice
  • 1.5 cups tonic water (chilled)
  • 2 cups ice cubes
  • 8 cucumber rounds (for garnish)

Instructions

    Divide 20 fresh mint leaves and 1/2 thinly sliced English cucumber between two cocktail glasses or shakers. Add 2 tsp honey (or agave for vegan) to each and muddle firmly for 30 seconds to release the cucumber water and mint oils.

    Add 2 tbsp fresh lime juice and a handful of ice cubes to the muddled mixture. Stir to chill.

    Strain the mixture into ice-filled glasses, pressing the muddled solids to extract maximum flavor.

    Top each glass with 1.5 cups tonic water (chilled), pouring gently to preserve the bubbles.
