Pancake Cereal Bites
Tiny bite-size pancakes piped onto the griddle, piled into a bowl, and served with milk and syrup like a bowl of cereal, the breakfast format that keeps resurging on TikTok.
Ingredients
- 1 cup all-purpose flour
- 2 tbsp granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup buttermilk
- 1 egg
- 2 tbsp unsalted butter, melted
- 1/2 cup milk (for serving)
- 2 tbsp maple syrup
- 1/2 cup fresh berries (for topping)

In a bowl, whisk 1 cup all-purpose flour, 2 tbsp granulated sugar, 1 tsp baking powder, and 1/4 tsp salt together.

In a second bowl, whisk 1 cup buttermilk, 1 egg, and 2 tbsp melted unsalted butter together, then pour into the dry ingredients and whisk just until smooth.

Spoon the batter into a squeeze bottle or a zip-top bag with one corner snipped off.

Heat a lightly buttered griddle or nonstick skillet over medium heat. Pipe the batter into small dime-size dots, leaving space between each.
