Ingredients

  • 1 lb elbow macaroni
  • 2 cups corn kernels
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup Cotija cheese, crumbled
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 2 tbsp jalapeno pepper, minced
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp Tajin seasoning (optional garnish)
  • 1/2 tsp salt

Instructions

    Bring a large pot of salted water to a boil and cook the 1 lb elbow macaroni according to package directions until al dente; drain and rinse under cold water.

    Meanwhile, heat a large dry skillet over medium-high heat. Add the 2 cups corn kernels and cook, stirring occasionally, until charred in spots, about 6 to 8 minutes. Let cool slightly.

    In a large bowl, whisk together the 1/2 cup mayonnaise, 1/4 cup sour cream, 2 tbsp lime juice, 1 tsp chili powder, and 1/2 tsp salt until smooth.

    Add the drained pasta, charred corn, 1/2 cup crumbled Cotija cheese, 2 tbsp minced jalapeno pepper, and 1/4 cup chopped fresh cilantro to the dressing and toss to coat evenly.
