Flautas
Crispy fried rolled tortillas filled with shredded chicken or beef. Golden, crunchy, and perfect for appetizers or a light meal.
Ingredients
- 8 flour tortillas (6-8 inch)
- 2 cups shredded cooked chicken
- 1/2 cup sour cream
- 1/2 cup diced green chiles (canned), drained
- 1/2 cup shredded cheddar cheese
- to taste salt and pepper
- 2 cups vegetable oil (for frying)
- 1/2 cup sour cream (for serving)
- 1/2 cup salsa (for serving)
- 2 tbsp fresh cilantro (for garnish), chopped

In a bowl, combine 2 cups shredded cooked chicken, 1/2 cup sour cream, 1/2 cup drained diced green chiles (canned), 1/2 cup shredded cheddar cheese, and salt and pepper. Mix well.

Warm each 8 flour tortillas (6-8 inch) in a dry skillet for a few seconds to make them pliable.

Spoon 2-3 tablespoons of the chicken mixture onto each tortilla. Roll tightly, tucking in the sides to create a sealed bundle.

Heat 2 cups vegetable oil (for frying) in a large skillet or pot to 350°F. Working in batches, carefully place the rolled flautas seam-side down in the hot oil.

Fry for 1-2 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate.

Serve warm with 1/2 cup sour cream (for serving) and 1/2 cup salsa (for serving) for dipping. Garnish with 2 tbsp chopped fresh cilantro (for garnish).
