Ingredients

  • 4 oz fresh ginger, peeled, chopped
  • 1/2 cup fresh lime juice
  • 1/4 cup fresh lemon juice
  • 1/4 cup simple syrup (or honey)
  • 2 cups cold water
  • 24 oz ginger beer (store-bought)
  • 12 leaves fresh mint leaves
  • as needed ice cubes

Instructions

    Add 4 oz peeled, chopped fresh ginger, 1/2 cup fresh lime juice, 1/4 cup fresh lemon juice, 1/4 cup simple syrup (or honey), and 2 cups cold water to a blender. Blend on high for 30 seconds until the ginger is fully broken down.

    Strain the blended mixture through a fine-mesh sieve into a large pitcher, pressing well to extract all liquid. Discard the ginger pulp.

    Taste and adjust sweetness or tartness as desired.

    Fill glasses with ice cubes. Pour the strained ginger-citrus base halfway up each glass.
