Green Seasoning Chicken
Tender chicken braised in a fragrant Caribbean green seasoning paste of herbs and spices for a vibrant and aromatic dinner.
Ingredients
- 2 lbs chicken thighs (bone-in, skin-on)
- 1 cup fresh cilantro, roughly chopped
- 1/2 cup culantro (or additional cilantro), roughly chopped
- 4 garlic cloves
- 1/2 onion, quartered
- 4 scallions, chopped
- 1 tbsp fresh thyme
- 2 tsp ginger root, peeled and minced
- 2 tbsp lime juice
- 2 tbsp olive oil
- 2 cups chicken broth
- 1/2 tsp salt
- 1/4 tsp black pepper

In a food processor or blender, combine 1 cup roughly chopped fresh cilantro, 1/2 cup roughly chopped culantro (or additional cilantro), 4 garlic cloves, 1/2 quartered onion, 4 chopped scallions, 1 tbsp fresh thyme, 2 tsp peeled and minced ginger root, and 2 tbsp lime juice. Pulse until a smooth paste forms.

Heat 2 tbsp olive oil in a large pot or Dutch oven over medium-high heat.

Season 2 lbs chicken thighs (bone-in, skin-on) with 1/2 tsp salt and 1/4 tsp black pepper.

Brown the chicken thighs for 3-4 minutes on each side. Remove and set aside.

Add the green seasoning paste to the pot and sauté for 2-3 minutes until fragrant.

Return the chicken thighs to the pot and pour in the 2 cups chicken broth.

Bring to a simmer, then reduce heat and cover. Braise for 25-30 minutes until the chicken thighs are tender and cooked through, with internal temperature reaching 165°F.

Stir occasionally and adjust seasoning if needed.
