Pain Patate
A traditional Haitian sweet potato pudding infused with coconut milk, banana, and warm spices. It bakes into a dense, rich sliceable dessert with a smooth, comforting texture.
Ingredients
- 2 lbs white sweet potatoes, grated
- 1 ripe banana, mashed
- 1.5 cups canned coconut milk
- 1 cup evaporated milk
- 1/2 cup dark brown sugar
- 1/4 cup unsalted butter, melted
- 1/4 cup raisins
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt

Preheat oven to 350 degrees F and grease an 8 inch square baking dish.

In a large bowl, combine 2 lbs grated white sweet potatoes and 1 mashed ripe banana.

Stir in 1.5 cups canned coconut milk, 1 cup evaporated milk, 1/2 cup dark brown sugar, and 1/4 cup melted unsalted butter until uniform.

Mix in 1/4 cup raisins, 1 tsp vanilla extract, 1/2 tsp ground cinnamon, 1/4 tsp ground nutmeg, and 1/4 tsp salt until fully incorporated.

Pour batter into the prepared dish and smooth the top evenly.
