Grain Bowl
A nourishing bowl with grains, roasted veggies, chickpeas, feta, olives, and a lemon-oregano dressing for a vibrant lunch.
Ingredients
- 1 cup quinoa, cooked
- 1/2 cup roasted vegetables, chopped
- 1/2 cup chickpeas, drained
- 1/4 cup feta cheese, crumbled
- 1/4 cup Kalamata olives, sliced
- 1/4 cup lemon-oregano dressing

In a serving bowl, start by placing 1 cup cooked quinoa as the base layer.

Arrange 1/2 cup roasted vegetables on top of the grains, placing them in one section of the bowl.

Add 1/2 cup drained chickpeas next to the roasted vegetables, creating another section in the bowl.

Sprinkle 1/4 cup crumbled feta cheese over part of the bowl.

Add 1/4 cup sliced Kalamata olives to complete the arrangement.

Just before serving, drizzle 1/4 cup lemon-oregano dressing over all the ingredients.
