Ezogelin Çorbası
A traditional Turkish red lentil soup cooked with bulgur, rice, and spices, finished with a mint and pepper oil.
Ingredients
- 1 cup red lentils, rinsed
- 2 tbsp fine bulgur, rinsed
- 2 tbsp white rice, rinsed
- 2 tbsp olive oil
- 1 medium yellow onion, diced
- 2 garlic cloves, minced
- 1 tbsp tomato paste
- 1 tbsp red pepper paste
- 6 cups vegetable broth
- 1 tbsp dried mint
- 1 tsp Aleppo pepper flakes
- 2 tbsp fresh lemon juice

Heat half of the 2 tbsp olive oil in a large pot over medium heat.

Add 1 medium diced yellow onion and 2 minced garlic cloves, cooking for 5 minutes until soft and translucent.

Stir in 1 tbsp tomato paste and 1 tbsp red pepper paste, cooking for 1 minute until fragrant.

Add 1 cup rinsed red lentils, 2 tbsp rinsed fine bulgur, 2 tbsp rinsed white rice, and 6 cups vegetable broth, bringing the soup to a boil.

Reduce heat to low, cover, and simmer for 25 minutes until grains and lentils are tender.

In a small skillet, heat the remaining 2 tbsp olive oil over medium heat, add 1 tbsp dried mint and 1 tsp Aleppo pepper flakes, and sizzle for 30 seconds.

Stir the infused oil and 2 tbsp fresh lemon juice into the soup before serving.
