  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup Caesar dressing
  • 1/2 cup croutons, lightly crushed
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp bacon bits (optional)

    Rub the 1 lb boneless, skinless chicken breast with 1 tbsp olive oil, then season with 1 tsp Italian seasoning, 1/2 tsp salt, and 1/2 tsp black pepper.

    Preheat a grill or grill pan to medium-high heat. Grill the chicken for 5-6 minutes per side, or until the internal temperature reaches 165°F (74°C) and the juices run clear.

    Remove the chicken from the grill and let it rest for 5 minutes. Then slice it into thin strips.

    Warm the 2 large flour tortillas (10-inch) slightly in a dry skillet or microwave for 10-15 seconds to make them more pliable.
