  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper, freshly ground
  • 1/4 cup blue cheese dressing
  • 1/4 cup blue cheese crumbles
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp fresh chives, chopped

Instructions

    Preheat a gas or charcoal grill to high heat (about 450-500 degrees F). Clean and oil the grates.

    Brush the cut sides of 4 halved lengthwise romaine hearts with 2 tbsp olive oil and season with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper.

    Place the romaine cut-side down on the hot grill. Grill for 2-3 minutes without moving until char marks form, then flip and grill the outer leaves for 1 minute. The lettuce should be wilted at the edges but still have a cool center.

    Transfer the grilled romaine to a serving platter, cut-side up.

    Drizzle 1/4 cup blue cheese dressing over each half, then scatter 1/4 cup blue cheese crumbles, 1 cup halved cherry tomatoes, and 1/4 cup thinly sliced red onion on top.
