Grilled Romaine with Blue Cheese
Halved romaine hearts get a quick char on the grill, then topped with tangy blue cheese dressing, blue cheese crumbles, and cherry tomatoes for a warm, smoky take on a classic steakhouse salad.
Ingredients
- 4 romaine hearts, halved lengthwise
- 2 tbsp olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper, freshly ground
- 1/4 cup blue cheese dressing
- 1/4 cup blue cheese crumbles
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 2 tbsp fresh chives, chopped
Instructions
-
1
Preheat a gas or charcoal grill to high heat (about 450-500 degrees F). Clean and oil the grates.
-
2
Brush the cut sides of 4 halved lengthwise romaine hearts with 2 tbsp olive oil and season with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper.
-
3
Place the romaine cut-side down on the hot grill. Grill for 2-3 minutes without moving until char marks form, then flip and grill the outer leaves for 1 minute. The lettuce should be wilted at the edges but still have a cool center.
-
4
Transfer the grilled romaine to a serving platter, cut-side up.
-
5
Drizzle 1/4 cup blue cheese dressing over each half, then scatter 1/4 cup blue cheese crumbles, 1 cup halved cherry tomatoes, and 1/4 cup thinly sliced red onion on top.
-
6
Finish with 2 tbsp chopped fresh chives and serve immediately.
