Ingredients

  • 1 English cucumber, roughly chopped
  • 1/2 cup fresh mint leaves
  • 1/4 cup fresh lemon juice
  • 1 cup cold water
  • 2 cups plain sparkling water, chilled
  • 1/4 tsp fine sea salt
  • as needed ice cubes
  • as needed cucumber slices (for garnish), thinly sliced

Instructions

    Combine 1 roughly chopped English cucumber, 1/2 cup fresh mint leaves, 1/4 cup fresh lemon juice, 1 cup cold water, and 1/4 tsp fine sea salt in a blender. Blend on high for 45 seconds until completely smooth.

    Strain the mixture through a fine-mesh strainer or cheesecloth into a pitcher, pressing firmly to extract all the liquid. Discard the pulp.

    Taste and adjust with a little more lemon juice if needed.

    Fill glasses with ice cubes. Pour the cucumber mixture about halfway up each glass, then top with 2 cups chilled plain sparkling water. Stir gently.
