Sparkling Cucumber Mint Cooler
Fresh cucumber and mint blended with lemon juice and a touch of honey, strained and topped with sparkling water for a bright, refreshing Whole30-compliant drink. Perfect for warm days and summer entertaining.
Ingredients
- 1 English cucumber, roughly chopped
- 1/2 cup fresh mint leaves
- 1/4 cup fresh lemon juice
- 1 cup cold water
- 2 cups plain sparkling water, chilled
- 1/4 tsp fine sea salt
- as needed ice cubes
- as needed cucumber slices (for garnish), thinly sliced

Combine 1 roughly chopped English cucumber, 1/2 cup fresh mint leaves, 1/4 cup fresh lemon juice, 1 cup cold water, and 1/4 tsp fine sea salt in a blender. Blend on high for 45 seconds until completely smooth.

Strain the mixture through a fine-mesh strainer or cheesecloth into a pitcher, pressing firmly to extract all the liquid. Discard the pulp.

Taste and adjust with a little more lemon juice if needed.

Fill glasses with ice cubes. Pour the cucumber mixture about halfway up each glass, then top with 2 cups chilled plain sparkling water. Stir gently.

Garnish with thinly sliced cucumber slices (for garnish) and a sprig of fresh mint. Serve immediately.
