Ingredients

  • 1 fresh pineapple (peeled, cored, and cut into 1/2-inch thick rings)
  • 1/4 cup honey
  • 2 tbsp unsalted butter
  • 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • pinch salt (just a pinch)
  • as needed cooking spray (for the grill)
  • 2 cups vanilla ice cream (optional, for serving)
  • 8 fresh mint leaves (for garnish)

Instructions

  1. 1

Preheat grill to medium-high heat (about 400°F). Lightly oil the grates with as needed cooking spray (for the grill) to prevent sticking.

  2. 2

In a small saucepan over low heat, combine 1/4 cup honey, 2 tbsp unsalted butter, 1/2 tsp ground cinnamon, 1/2 tsp vanilla extract, and pinch salt (just a pinch). Stir until butter is melted and mixture is well combined. Remove from heat and set aside.

  3. 3

Place 1 fresh pineapple (peeled, cored, and cut into 1/2-inch thick rings) rings directly on the grill grates. Grill for 2-3 minutes per side until grill marks appear and the pineapple begins to caramelize.

  4. 4

While grilling, brush the pineapple with half of the honey-cinnamon glaze, reserving the rest for serving.

  5. 5

Once the pineapple is grilled on both sides and slightly caramelized, remove from the grill and place on a serving plate.

  6. 6

Drizzle the remaining honey-cinnamon glaze over the grilled pineapple.

  7. 7

Serve warm, garnished with 8 fresh mint leaves (for garnish) and a scoop of 2 cups vanilla ice cream (optional, for serving) if desired.
