Mantecados
Traditional Spanish crumbly shortbread cookies made with toasted flour, pork lard, and aromatic cinnamon. They feature a delicate melt in your mouth texture topped with sesame seeds.
Ingredients
- 3 cups all-purpose flour
- 1 cup pork lard, softened
- 1 cup powdered sugar, sifted
- 1 tsp ground cinnamon
- 2 tbsp sesame seeds

Heat a dry skillet over medium-low heat, stir in 3 cups all-purpose flour, and toast for 10 minutes until lightly golden and fragrant, then let cool completely.

Preheat the oven to 350 degrees F (175 degrees C) and line a baking sheet with parchment paper.

In a mixing bowl, beat 1 cup softened pork lard with 1 cup sifted powdered sugar until smooth.

Mix in cooled all-purpose flour and 1 tsp ground cinnamon until a cohesive dough forms.

Roll dough to 1/2-inch thickness, cut into rounds, transfer to the baking sheet, and sprinkle with 2 tbsp sesame seeds.
