Kaab el Ghazal
Classic North African pastry horns filled with sweet almond paste and scented with orange blossom water. Wrapped in a delicate thin pastry layer and baked to a soft golden hue.
Ingredients
- 2 cups all-purpose flour
- 2 tbsp unsalted butter, melted
- 2 tbsp orange blossom water
- 1/4 tsp fine salt
- 2.5 cups blanched almond flour
- 3/4 cup powdered sugar, sifted
- 1/2 tsp ground cinnamon
- 2 tbsp unsalted butter, softened
- 1 tbsp orange blossom water

In a bowl, mix 2 cups all-purpose flour, 1/4 tsp fine salt, 2 tbsp melted unsalted butter, and 2 tbsp orange blossom water. Add warm water gradually until a smooth dough forms, then cover and rest for 30 minutes.

In another bowl, combine 2.5 cups blanched almond flour, 3/4 cup sifted powdered sugar, 1/2 tsp ground cinnamon, 2 tbsp softened unsalted butter, and 1 tbsp orange blossom water to create a thick paste.

Divide the almond paste into 16 portions and shape each into a small crescent log.

Roll out dough very thin, wrap dough around each almond crescent, seal edges tightly, and trim excess pastry.

Prick each pastry with a small pin and bake at 350°F for 12 to 15 minutes until pale gold.
