Khobz
A traditional Moroccan round bread with a crusty exterior and a soft, chewy interior. Perfect for scooping up tagines and soups.
Ingredients
- 1.25 cups warm water
- 1.5 tsp active dry yeast
- 1 tsp granulated sugar
- 3 cups unbleached all-purpose flour
- 1 tsp fine sea salt
- 1 tbsp extra virgin olive oil
- 2 tbsp fine semolina flour

In a bowl, combine 1.25 cups warm water, 1.5 tsp active dry yeast, and 1 tsp granulated sugar, then let rest for 5 minutes until foamy.

Add 3 cups unbleached all-purpose flour, 1 tsp fine sea salt, and 1 tbsp extra virgin olive oil to the yeast mixture and stir until a shaggy dough forms.

Knead the dough on a lightly floured surface for 8 minutes until smooth, then cover and let rise for 1 hour.

Divide dough into round discs, dust with 2 tbsp fine semolina flour, cover, and rest for 30 minutes.

Prick top of discs with a fork and bake at 425 degrees Fahrenheit for 15 minutes until golden brown.
