  • 3 lb boneless, skinless chicken breasts
  • 2 cups jasmine rice
  • 1/4 cup fresh ginger root, minced
  • 4 garlic cloves, minced
  • 1/4 cup soy sauce
  • 2 tsp sesame oil
  • 6 cups chicken broth
  • 2 tbsp rice vinegar
  • 2 chilies Thai bird's eye chilies, sliced
  • 4 stalks scallions, chopped

Instructions

    Bring 6 cups chicken broth to a simmer in a large pot. Add 3 lb boneless, skinless chicken breasts and poach for 15-20 minutes until cooked through. Remove and set aside to cool, then slice into bite-sized pieces.

    In the same broth, bring to a boil and add 2 cups jasmine rice. Reduce heat, cover, and simmer for 15-18 minutes until tender and liquid is absorbed.

    While rice cooks, combine 1/4 cup minced fresh ginger root, 4 minced garlic cloves, 1/4 cup soy sauce, 2 tsp sesame oil, 2 tbsp rice vinegar, and 2 chilies sliced Thai bird's eye chilies in a small bowl to make the sauce.
