Mee Goreng
Spicy Malaysian yellow noodle stir-fry with shrimp, tofu, and a piquant sweet-salty sauce. A street food favorite that's addictively flavorful.
Ingredients
- 1 lb fresh yellow egg noodles
- 1/2 lb shrimp, peeled
- 8 oz firm tofu, cubed
- 4 cloves garlic, minced
- 2 red Thai chili, minced
- 2 shallots, sliced
- 2 tbsp ketchup
- 2 tbsp soy sauce
- 1 tbsp sambal oelek or chili paste
- 2 tbsp fresh lime juice
- 2 tbsp vegetable oil
- 2 cups cabbage, shredded
- 1 cup bean sprouts
- 2 egg, beaten
- 2 green onions, sliced

Cook 1 lb fresh yellow egg noodles according to package directions, drain and set aside.

Heat 2 tbsp vegetable oil in a wok or large skillet over high heat. Add 4 cloves minced garlic and 2 sliced shallots and stir-fry for 1 minute until fragrant.

Add 1/2 lb shrimp, peeled and 8 oz cubed firm tofu and stir-fry for 2 minutes until the shrimp starts to turn pink.

Push everything to the side and scramble 2 beaten egg in the center. Once cooked, mix with the shrimp and tofu.

Add 2 cups shredded cabbage and 1 cup bean sprouts and stir-fry for 1 minute.

Add the cooked yellow noodles, 2 tbsp ketchup, 2 tbsp soy sauce, 1 tbsp sambal oelek or chili paste, 2 minced red Thai chili, and 2 tbsp fresh lime juice. Toss everything together for 2 minutes until well coated.

Garnish with 2 sliced green onions and serve immediately.
