Nasi Lemak
Fragrant rice cooked in coconut milk and pandan leaves, served with fried anchovies, peanuts, cucumber, hard-boiled eggs, and spicy sambal.
Ingredients
- 2 cups jasmine rice, rinsed
- 1 cup coconut milk
- 1.5 cups water
- 2 pandan leaves, tied in knots
- 2 slices fresh ginger, sliced
- 1/2 tsp salt
- 1/4 cup cooking oil
- 1/2 cup raw peanuts
- 1 cup dried anchovies, rinsed, dried
- 1 cucumber, sliced
- 4 eggs, hard-boiled
- 1/2 cup prepared sambal paste

Combine 2 cups rinsed jasmine rice, 1 cup coconut milk, 1.5 cups water, 2 tied in knots pandan leaves, 2 slices sliced fresh ginger, and 1/2 tsp salt in a pot.

Bring to a boil over medium heat, then reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed.

Remove from heat and let the rice steam covered for 10 minutes, then discard pandan leaves and fresh ginger.

Heat 1/4 cup cooking oil in a skillet over medium heat and fry 1/2 cup raw peanuts until golden brown, then remove and drain.

In the same oil, fry 1 cup rinsed, dried dried anchovies until crispy and golden brown, then drain on paper towels.

Serve warm coconut rice accompanied by fried dried anchovies, fried raw peanuts, 1 sliced cucumber, 4 hard-boiled eggs, and 1/2 cup prepared sambal paste.
