Moroccan Roasted Cauliflower
Tender roasted cauliflower florets coated in warm Moroccan spices with a drizzle of honey and garnish of fresh cilantro. Crispy edges and aromatic throughout.
Ingredients
- 8 cups cauliflower, cut into florets
- 3 tbsp olive oil
- 1/2 tsp ground cumin
- 1/2 tsp paprika
- 1/4 tsp ground coriander
- 1/4 tsp ground ginger
- 1/4 tsp ground cinnamon
- 1/4 tsp salt
- 2 tbsp honey
- 2 tbsp fresh cilantro, chopped
- 1/2 lemon lemon, zest and juice

Preheat oven to 425°F. Toss 8 cups cut into florets cauliflower with 3 tbsp olive oil, 1/2 tsp ground cumin, 1/2 tsp paprika, 1/4 tsp ground coriander, 1/4 tsp ground ginger, 1/4 tsp ground cinnamon, and 1/4 tsp salt.

Spread 8 cups cut into florets cauliflower in a single layer on a baking sheet.

Roast for 20-25 minutes, stirring halfway through, until florets are golden brown and crispy at the edges.

Remove from oven and drizzle with 2 tbsp honey. Toss gently to coat.

Transfer to a serving dish and garnish with 2 tbsp chopped fresh cilantro and 1/2 lemon zest and juice lemon. Serve warm.
