Moroccan Semolina Cake
A tender, golden semolina and coconut cake soaked in fragrant honey syrup and topped with whole almonds. Sweet, moist, and deeply aromatic with orange blossom and cinnamon.
Ingredients
- 1.5 cups fine semolina
- 1/2 cup shredded coconut (unsweetened)
- 24 almonds whole blanched almonds
- 5 tbsp butter, melted
- 1/2 cup plain yogurt
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup honey
- 1/2 cup water
- 1 tsp orange blossom water
- 1/4 tsp ground cinnamon

Preheat oven to 350°F. In a bowl, combine 1.5 cups fine semolina, 1/2 cup shredded coconut (unsweetened), 1/2 tsp baking powder, 1/4 tsp salt, and 1/4 tsp ground cinnamon.

Stir in 5 tbsp melted butter and 1/2 cup plain yogurt until the mixture is well combined and moist.

Spread the batter into a greased 8x8 inch baking pan and smooth the top. Cut into 24 diamond or square shapes.

Place one 24 almonds whole blanched almonds in the center of each piece.

Bake for 25-30 minutes until golden brown and a toothpick inserted in the center comes out clean.

While the cake bakes, combine 1 cup honey, 1/2 cup water, and 1 tsp orange blossom water in a saucepan. Bring to a boil, then reduce heat and simmer for 2 minutes.

Remove cake from oven and immediately pour the warm honey syrup over the hot cake. Let cool completely in the pan before serving.
