Mrouzia
A classic Moroccan tagine of tender beef braised with almonds, dried apricots, and raisins, sweetened with cinnamon and warmed by ginger. A celebration of sweet and savory.
Ingredients
- 2 lbs beef chuck, cut into 1 1/2-inch cubes, cubed
- 2 medium yellow onions, diced
- 4 garlic cloves, minced
- 2 tbsp fresh ginger, minced
- 1/2 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp ground cinnamon
- 2 cups beef broth
- 1/2 cup dried apricots, halved
- 1/2 cup raisins
- 1/2 cup sliced almonds, toasted
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper

Heat 2 tbsp olive oil in a large pot or Dutch oven over medium-high heat.

Brown the 2 lbs cubed beef chuck, cut into 1 1/2-inch cubes in batches, seasoning with 1/2 tsp salt and 1/4 tsp black pepper. Set aside.

In the same pot, sauté 2 medium diced yellow onions until softened, about 5 minutes. Add 4 minced garlic cloves and 2 tbsp minced fresh ginger, cooking for 1 minute.

Stir in 1 tsp paprika, 1/2 tsp ground cumin, and 1/2 tsp ground cinnamon, then return the beef to the pot.

Pour in 2 cups beef broth, then add 1/2 cup halved dried apricots and 1/2 cup raisins. Bring to a simmer.

Cover and cook for 45 minutes until the beef is tender, stirring occasionally.

Stir in the 1/2 cup toasted sliced almonds and simmer uncovered for 5 more minutes.
