Msemen with Cheese or Honey
A classic North African square flatbread layered with butter and cooked until crispy. Served hot with creamy soft cheese or a drizzle of warm honey.
Ingredients
- 1 cup fine semolina
- 1 cup all-purpose flour
- 1/2 tsp fine salt
- 3/4 cup warm water
- 1/4 cup vegetable oil
- 1/4 cup unsalted butter, melted
- 4 oz soft cheese
- 3 tbsp honey, warmed

Combine 1 cup fine semolina, 1 cup all-purpose flour, and 1/2 tsp fine salt in a large bowl.

Gradually mix in 3/4 cup warm water and knead for 10 minutes until smooth and elastic.

Divide dough into small balls and coat them with 1/4 cup vegetable oil.

Flatten each ball thinly on an oiled surface, brush with 1/4 cup melted unsalted butter, and fold into square packets.

Cook packets on a hot skillet over medium heat for 3 to 4 minutes per side until golden brown and flaky.

Serve warm with 4 oz soft cheese or drizzled with 3 tbsp warmed honey.
