Shorbat Khodar
A comforting North African vegetable soup spiced with cumin, turmeric, and coriander, finished with fresh lemon juice.
Ingredients
- 2 tbsp olive oil
- 1 yellow onion, diced
- 4 garlic cloves, minced
- 2 cups carrots, diced
- 2 cups Yukon Gold potatoes, diced
- 2 cups zucchini, diced
- 1 cup green peas
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp ground turmeric
- 6 cups vegetable broth
- 1 tsp salt
- 1/2 tsp black pepper, ground
- 2 tbsp fresh lemon juice
- 1/4 cup fresh parsley, chopped

Heat 2 tbsp olive oil in a large pot over medium heat.

Add 1 diced yellow onion and 4 minced garlic cloves, cooking for 5 minutes until softened.

Stir in 1 tsp ground cumin, 1/2 tsp ground coriander, and 1/2 tsp ground turmeric for 1 minute until fragrant.

Add 2 cups diced carrots, 2 cups diced Yukon Gold potatoes, and 2 cups diced zucchini, stirring to coat in the spices.

Pour in 6 cups vegetable broth, 1 tsp salt, and 1/2 tsp ground black pepper, then bring the liquid to a boil.

Reduce heat to low, cover, and simmer for 20 minutes until the vegetables are tender.

Stir in 1 cup green peas and cook uncovered for 5 minutes.

Remove from heat, stir in 2 tbsp fresh lemon juice, and garnish with 1/4 cup chopped fresh parsley before serving.
