Pasta e Ceci
A traditional Roman dish featuring tender pasta and chickpeas cooked in a savory garlic broth with rosemary and tomato paste. It combines hearty textures with simple pantry ingredients for a fast dinner.
Ingredients
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 tsp fresh rosemary, minced
- 1/4 tsp red pepper flakes
- 2 tbsp tomato paste
- 2 cans canned chickpeas, drained
- 4 cups vegetable broth
- 6 oz ditalini pasta
- 1 tsp kosher salt

Heat 2 tbsp olive oil in a pot over medium heat.

Add 4 minced garlic cloves, 1 tsp minced fresh rosemary, and 1/4 tsp red pepper flakes, stirring until aromatic for 1 minute.

Stir in 2 tbsp tomato paste and cook for 2 minutes until dark red.

Add 2 cans drained canned chickpeas, 4 cups vegetable broth, and 1 tsp kosher salt, then bring to a boil.

Add 6 oz ditalini pasta and simmer until tender, stirring frequently for about 10 minutes.
