Peach Pancakes
Fluffy buttermilk pancakes studded with juicy diced peaches and warm cinnamon spice. A classic Southern morning treat cooked until golden brown.
Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 2 tbsp light brown sugar
- 1.5 cups buttermilk
- 2 large egg, beaten
- 3 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- 1.5 cups fresh peaches, diced

In a large mixing bowl, whisk together 2 cups all-purpose flour, 2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt, and 1/2 tsp ground cinnamon.

In a separate bowl, whisk together 1.5 cups buttermilk, 2 beaten large egg, 3 tbsp melted unsalted butter, 2 tbsp light brown sugar, and 1 tsp vanilla extract.

Pour the wet mixture into the dry ingredients and stir gently until just combined, then fold in 1.5 cups diced fresh peaches.

Heat a nonstick griddle over medium heat and ladle 1/4 cup portions of batter onto the hot surface.
