Peanut Butter Noodles
Tender noodles coated in a rich, creamy peanut butter sauce with a kick of heat and bright citrus notes. A trendy Asian-American noodle dish that is deeply satisfying and totally craveable.
Ingredients
- 1 lb Asian noodles (wheat or egg)
- 5 tbsp peanut butter
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tsp sesame oil
- 2 tbsp fresh lime juice
- 1/4 tsp red pepper flakes
- 2 cloves garlic, minced
- 1/2 tsp fresh ginger, minced
- 5 tbsp water
- 1 cucumber, julienned
- 1/2 cup carrots, julienned
- 2 green onions, sliced
- 3 tbsp fresh cilantro, chopped
- 5 tbsp crushed peanuts

Cook 1 lb Asian noodles (wheat or egg) according to package directions. Drain and set aside.

In a small bowl, whisk together 5 tbsp peanut butter, 2 tbsp soy sauce, 2 tbsp rice vinegar, 1 tsp sesame oil, 2 tbsp fresh lime juice, 1/4 tsp red pepper flakes, 2 cloves minced garlic, 1/2 tsp minced fresh ginger, and 5 tbsp water until smooth. Adjust consistency with more water if needed.

In a large bowl, toss cooked noodles with the peanut sauce until evenly coated.

Top with 1 julienned cucumber, 1/2 cup julienned carrots, 2 sliced green onions, 3 tbsp chopped fresh cilantro, and 5 tbsp crushed peanuts.
