Spring Rolls
Crispy fried rolls filled with cabbage, carrots, and vermicelli noodles. A beloved Asian-American appetizer that is golden, crunchy, and perfect with sweet and sour dipping sauce.
Ingredients
- 24 spring roll wrappers
- 2 cups green cabbage, shredded
- 1 cup carrots, shredded
- 2 oz vermicelli rice noodles, cooked and cooled
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 2 cloves garlic, minced
- 1/2 tsp fresh ginger, minced
- 2 green onions, chopped
- 6 tbsp water
- 3 cups vegetable oil (for frying)
- 1/2 cup sweet and sour sauce

In a bowl, combine 2 cups shredded green cabbage, 1 cup shredded carrots, 2 oz cooked and cooled vermicelli rice noodles, 2 tbsp soy sauce, 1 tsp sesame oil, 2 cloves minced garlic, 1/2 tsp minced fresh ginger, and 2 chopped green onions. Mix well.

Wet the edges of a 24 spring roll wrappers with 6 tbsp water. Place about 2 tablespoons of filling in the center.

Fold the bottom corner over the filling, then fold in the left and right corners. Roll tightly and seal the top corner with water.

Heat 3 cups vegetable oil (for frying) to 350°F in a deep pot. Fry spring rolls in batches for 2-3 minutes per side until golden brown.

Remove with a slotted spoon and drain on paper towels. Serve hot with 1/2 cup sweet and sour sauce for dipping.
