Pimento Cheese Sandwich
A Southern staple of creamy, tangy homemade pimento cheese spread generously on white sandwich bread. The spread comes together in minutes and is even better after a short rest in the fridge. Plan ahead: the spread is best after chilling for 30 minutes.
Ingredients
- 2 cups sharp cheddar cheese, freshly grated
- 4 oz cream cheese, softened
- 1/4 cup mayonnaise
- 1/4 cup jarred diced pimentos, drained
- 1/2 tsp hot sauce (such as Tabasco)
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp black pepper, freshly ground
- 8 slices white sandwich bread slices

In a medium bowl, combine 2 cups freshly grated sharp cheddar cheese, 4 oz softened cream cheese, and 1/4 cup mayonnaise. Stir vigorously until well blended and creamy.

Add 1/4 cup drained jarred diced pimentos, 1/2 tsp hot sauce (such as Tabasco), 1/2 tsp onion powder, 1/2 tsp garlic powder, and 1/2 tsp freshly ground black pepper. Mix until evenly incorporated. Taste and adjust seasoning.

Cover and refrigerate the spread for at least 30 minutes to let the flavors meld.

Spread the pimento cheese generously on half the 8 slices white sandwich bread slices, then top with the remaining slices. Cut in half and serve. The spread keeps refrigerated for up to 5 days.
