Ingredients

  • 1.5 lbs carrots, peeled and sliced
  • 2 tbsp unsalted butter
  • 2 tbsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper, freshly ground
  • 1 tsp fresh thyme, leaves only
  • 1/4 cup water

    Peel and slice 1.5 lbs carrots on the diagonal into 1/4-inch thick pieces for even cooking.

    Melt 2 tbsp unsalted butter in a large skillet over medium heat. Add the carrots and toss to coat.

    Add 1/4 cup water, cover, and cook for 5-7 minutes until the carrots are just tender when pierced with a fork.

    Remove the lid and increase heat to medium-high. Add 2 tbsp honey and stir to coat the carrots.

    Cook uncovered for 3-5 minutes, stirring occasionally, until the liquid has evaporated and the carrots are coated in a shiny glaze.
