Honey Glazed Carrots
Tender carrots cooked in a sweet honey and butter glaze with a hint of thyme. A simple, elegant side that pairs well with any roast.
Ingredients
- 1.5 lbs carrots, peeled and sliced
- 2 tbsp unsalted butter
- 2 tbsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper, freshly ground
- 1 tsp fresh thyme, leaves only
- 1/4 cup water

Peel and slice 1.5 lbs carrots on the diagonal into 1/4-inch thick pieces for even cooking.

Melt 2 tbsp unsalted butter in a large skillet over medium heat. Add the carrots and toss to coat.

Add 1/4 cup water, cover, and cook for 5-7 minutes until the carrots are just tender when pierced with a fork.

Remove the lid and increase heat to medium-high. Add 2 tbsp honey and stir to coat the carrots.

Cook uncovered for 3-5 minutes, stirring occasionally, until the liquid has evaporated and the carrots are coated in a shiny glaze.

Season with 1/2 tsp salt and 1/4 tsp freshly ground black pepper, then sprinkle with 1 tsp leaves only fresh thyme. Serve immediately.
