  • 1/4 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1/4 tsp salt
  • 1 cup cold water
  • 1/4 cup full-fat coconut milk
  • 3 cups vegetable oil (for frying)

Instructions

    In a bowl, whisk together 1 cup rice flour, 1/4 cup all-purpose flour, 2 tbsp granulated sugar, and 1/4 tsp salt. Stir in 1 cup cold water and 1/4 cup full-fat coconut milk until a smooth, pourable batter forms. Rest 5 minutes.

    Heat 3 cups vegetable oil (for frying) in a deep skillet or wok to 350 degrees F (175 degrees C).

    Dip each 4 halved lengthwise ripe plantains or firm bananas piece into the batter, letting excess drip off.
