Ingredients

  • 1.5 cups rice flour
  • 1/2 cup tapioca starch
  • 2 cups coconut milk
  • 1/2 tsp salt
  • 2 pandan leaves, knotted
  • 1 cup palm sugar, chopped
  • 1 cup water

Instructions

    In a pot, whisk 1.5 cups rice flour, 1/2 cup tapioca starch, 1/2 tsp salt, and half of 2 cups coconut milk until smooth.

    Place over low heat with one of the 2 knotted pandan leaves and stir constantly until thick dough forms.

    Press dough through a noodle press onto parchment paper to form small nests.

    Steam nests over boiling water for 10 minutes until set.

    Simmer 1 cup chopped palm sugar, 1 cup water, remaining 2 cups coconut milk, and remaining 2 knotted pandan leaves for 5 minutes to make sauce.
