Rujak Bulung
A traditional Balinese fresh seaweed salad served in a warm, savory fish broth infused with galangal, chilies, and toasted grated coconut.
Ingredients
- 1 lb fresh sea lettuce seaweed, rinsed
- 1/2 lb tuna steak, chopped
- 3 cups water
- 1 tbsp fresh galangal, grated
- 1 tsp salt
- 4 red bird's eye chilies, sliced
- 1 tsp shrimp paste, toasted
- 2 tbsp lime juice
- 1/4 cup grated coconut, toasted
- 1/4 cup fried soybeans

In a pot, simmer 3 cups water with 1/2 lb chopped tuna steak, 1 tbsp grated fresh galangal, and 1 tsp salt for 10 minutes.

Strain the fish broth into a bowl and discard the solids.

Blanch 1 lb rinsed fresh sea lettuce seaweed in boiling water for 30 seconds, drain, and place in serving dishes.

Grind 4 sliced red bird's eye chilies and 1 tsp toasted shrimp paste together, then stir into the hot broth with 2 tbsp lime juice.

Pour the spicy broth over 1 lb rinsed fresh sea lettuce seaweed.

Top with 1/4 cup toasted grated coconut and 1/4 cup fried soybeans.
