Red Cabbage Slaw
A vibrant, tangy slaw of shredded red cabbage, carrots, and scallions tossed in an apple cider vinegar dressing. No mayo needed — crisp, colorful, and great alongside tacos or BBQ.
Ingredients
- 1 head red cabbage, shredded
- 2 carrots, shredded
- 4 scallions, thinly sliced
- 1/4 cup apple cider vinegar
- 2 tbsp olive oil
- 2 tsp maple syrup
- 1/2 tsp celery seed
- 1/2 tsp salt

In a large bowl, combine 1 head shredded red cabbage, 2 shredded carrots, and 4 thinly sliced scallions.

In a small bowl or jar, whisk together 1/4 cup apple cider vinegar, 2 tbsp olive oil, 2 tsp maple syrup, 1/2 tsp celery seed, 1/2 tsp salt, and black pepper to taste.

Pour the dressing over the cabbage mixture and toss well.

Let rest for at least 10 minutes before serving so the cabbage softens slightly.
