Rice Dressing
A traditional Louisiana side dish made with seasoned ground meats, chopped liver, holy trinity vegetables, and warm long-grain rice.
Ingredients
- 1/2 lb lean ground beef
- 1/2 lb ground pork
- 4 oz chicken livers, finely chopped
- 1 cup yellow onion, diced
- 1/2 cup green bell pepper, diced
- 1/2 cup celery, diced
- 3 garlic cloves, minced
- 1 tbsp Cajun seasoning
- 1 cup beef broth
- 3 cups cooked long-grain white rice
- 1/2 cup green onions, sliced

Heat a large skillet over medium-high heat and add 1/2 lb lean ground beef, 1/2 lb ground pork, and 4 oz finely chopped chicken livers.

Cook for 8 to 10 minutes until meats are browned and reach an internal temperature of 160°F.

Add 1 cup diced yellow onion, 1/2 cup diced green bell pepper, 1/2 cup diced celery, and 3 minced garlic cloves, cooking for 5 minutes until soft.

Stir in 1 tbsp Cajun seasoning and 1 cup beef broth, simmering for 5 minutes until liquid reduces.

Fold in 3 cups cooked long-grain white rice and 1/2 cup sliced green onions until thoroughly warmed.
