Seafood Stuffed Mirliton
Tender chayote squash halves stuffed with a savory mixture of shrimp, lump crabmeat, classic aromatics, and toasted breadcrumbs.
Ingredients
- 2 mirlitons, halved
- 4 tbsp unsalted butter
- 1 cup yellow onion, diced
- 1/2 cup celery, diced
- 1/2 cup green bell pepper, diced
- 2 garlic cloves, minced
- 1 lb raw shrimp, chopped
- 8 oz lump crabmeat
- 2 tsp Cajun seasoning
- 1/2 cup plain breadcrumbs

Boil 2 halved mirlitons in a large pot of salted water for 30 minutes until tender.

Drain mirlitons, scoop out seeds and pulp, leaving a thin shell, and reserve the pulp.

Melt 4 tbsp unsalted butter in a skillet over medium heat, then cook 1 cup diced yellow onion, 1/2 cup diced celery, 1/2 cup diced green bell pepper, and 2 minced garlic cloves for 6 minutes until soft.

Add reserved pulp, 1 lb chopped raw shrimp, 8 oz lump crabmeat, and 2 tsp Cajun seasoning, cooking for 4 minutes until the shrimp reaches an internal temperature of 145 degrees F.

Stir in 1/2 cup plain breadcrumbs, turn off heat, and spoon the mixture into the reserved mirliton shells.

Bake at 375 degrees F for 20 minutes until golden brown and bubbly.
