Roasted Red Pepper Salad
Sweet bell peppers roasted until tender, sliced into ribbons, and marinated in extra-virgin olive oil and sherry vinegar. A classic Spanish tapas dish served chilled or at room temperature.
Ingredients
- 4 red bell peppers, whole
- 2 garlic cloves, minced
- 3 tbsp extra-virgin olive oil
- 1 tbsp sherry vinegar
- 1/2 tsp salt

Preheat the oven to 400°F (200°C).

Place 4 whole red bell peppers on a baking sheet and roast for 35 minutes, turning occasionally, until charred and collapsed.

Transfer roasted peppers to a bowl, cover tightly with plastic wrap, and steam for 15 minutes.

Peel away the skin, remove seeds, and slice the peppers into thin strips.

Whisk together 3 tbsp extra-virgin olive oil, 1 tbsp sherry vinegar, 2 minced garlic cloves, and 1/2 tsp salt in a small bowl.

Toss the pepper strips with the dressing and chill for at least 30 minutes before serving.
