Roscon de Reyes
A traditional sweet ring-shaped brioche bread flavored with orange blossom water and citrus zest. It is decorated with candied fruit and sliced almonds for a festive celebration.
Ingredients
- 1/2 cup whole milk, warmed
- 2.25 tsp active dry yeast
- 1/2 cup granulated sugar
- 3.5 cups bread flour
- 1 tbsp orange zest, grated
- 1 tbsp orange blossom water
- 2 eggs, room temp
- 6 tbsp unsalted butter, softened
- 1/2 cup candied fruit slices, chopped
- 1/4 cup sliced almonds

Mix 1/2 cup warmed whole milk, 2.25 tsp active dry yeast, and a spoon of 1/2 cup granulated sugar in a bowl and let sit for 10 minutes until foamy.

In a large bowl, combine 3.5 cups bread flour, remaining 1/2 cup granulated sugar, 1 tbsp grated orange zest, 1 tbsp orange blossom water, 2 room temp eggs, and the yeast mixture.

Knead in 6 tbsp softened unsalted butter until smooth, cover, and let rise for 2 hours.

Shape dough into a ring, top with 1/2 cup chopped candied fruit slices and 1/4 cup sliced almonds, then rise for 1 hour.

Bake at 350 degrees Fahrenheit for 25 minutes until golden.
