Roasted Squash Salad
Tender roasted butternut squash served warm over crisp arugula with toasted pecans, tangy goat cheese, and a maple mustard dressing.
Ingredients
- 4 cups butternut squash, cubed
- 2 tbsp olive oil
- 1/2 cup pecans, toasted
- 4 oz goat cheese, crumbled
- 4 oz baby arugula
- 2 tbsp maple syrup
- 2 tsp Dijon mustard
- 2 tbsp apple cider vinegar

Preheat oven to 400 degrees F.

Toss 4 cups cubed butternut squash with half of the 2 tbsp olive oil on a baking sheet and roast for 25 minutes until tender.

Whisk remaining 2 tbsp olive oil, 2 tbsp maple syrup, 2 tsp Dijon mustard, and 2 tbsp apple cider vinegar together in a small bowl.

Arrange 4 oz baby arugula on a serving platter and top with warm roasted squash.

Sprinkle with 1/2 cup toasted pecans and 4 oz crumbled goat cheese, then drizzle with the dressing.
