Shrimp Creole
Plump shrimp simmered in a rich tomato sauce with aromatic onion, bell pepper, and celery. A classic Southern favorite served warm over rice.
Ingredients
- 1 lb large shrimp, peeled
- 2 tbsp olive oil
- 1 cup yellow onion, diced
- 1 cup green bell pepper, diced
- 1/2 cup celery stalks, diced
- 4 garlic cloves, minced
- 14 oz can diced tomatoes
- 1 cup tomato sauce
- 2 tsp Creole seasoning
- 1 bay leaf
- 3 cups cooked white rice

Heat 2 tbsp olive oil in a large skillet over medium heat.

Add 1 cup diced yellow onion, 1 cup diced green bell pepper, and 1/2 cup diced celery stalks, cooking for 6 minutes until softened.

Stir in 4 minced garlic cloves and cook for 1 minute until fragrant.

Pour in 14 oz can diced tomatoes, 1 cup tomato sauce, 2 tsp Creole seasoning, and 1 bay leaf, then simmer uncovered for 15 minutes.

Add 1 lb peeled large shrimp and cook for 5 minutes until opaque and internal temperature reaches 145 degrees F.

Discard bay leaf and serve sauce over warm 3 cups cooked white rice.
