Rose Sharbat
A fragrant Persian chilled drink made with rose water syrup, sweet basil seeds, and cold water. Delicate, floral, and beautifully cooling on a warm day.
Ingredients
- 4 tbsp rose water
- 1/4 cup granulated sugar
- 4 cups cold water
- 2 tsp sweet basil seeds (sabja seeds)
- 4 cups ice cubes
- 2 tsp dried rose petals (for garnish)

Soak 2 tsp sweet basil seeds (sabja seeds) in 1/4 cup cold water for 10 minutes. They will swell and develop a gel-like coating.

In a pitcher, combine 4 cups cold water and 1/4 cup granulated sugar. Stir until the sugar completely dissolves.

Stir in 4 tbsp rose water. Taste and adjust to your preference.

Add the soaked basil seeds with their soaking water to the pitcher and stir gently.

Pour over 4 cups ice cubes in glasses and garnish with 2 tsp dried rose petals (for garnish). Serve immediately.
