Gajar Ka Halwa
A classic Indian pudding made by simmering grated carrots with milk, ghee, and cardamom until rich and creamy. Garnish with toasted cashews and raisins for a sweet finish.
Ingredients
- 1 lb carrots, grated
- 2 tbsp ghee
- 2 cups whole milk
- 1/2 cup sugar
- 1/2 tsp ground cardamom
- 2 tbsp cashews, chopped
- 1 tbsp golden raisins

Heat 2 tbsp ghee in a heavy skillet over medium heat.

Add 2 tbsp chopped cashews and 1 tbsp golden raisins, stir-fry until golden, then remove and set aside.

Add 1 lb grated carrots to the pan and cook for 5 minutes until fragrant.

Pour in 2 cups whole milk and simmer over medium-low heat for 25 to 30 minutes, stirring occasionally until liquid evaporates.

Stir in 1/2 cup sugar and cook for 8 minutes until thickened.

Fold in 1/2 tsp ground cardamom along with toasted cashews and raisins before serving.
