Salted Honeydew Sea Salt Cream Tea
A Taiwanese-style bubble tea shop classic that layers a sweet honeydew green tea base under a fluffy, lightly salted cream cap. The interplay of sweet, grassy tea and savory cream is what makes this drink iconic.
Ingredients
- 2 cups brewed green tea (cooled), cooled
- 4 tbsp honeydew melon syrup (or blended fresh honeydew with sugar)
- 1/2 cup heavy whipping cream
- 1/4 cup whole milk
- 1/4 tsp fine sea salt
- 2 tsp granulated sugar

Make the sea salt cream: combine 1/2 cup heavy whipping cream, 1/4 cup whole milk, 1/4 tsp fine sea salt, and 2 tsp granulated sugar in a bowl or jar. Whisk or shake vigorously until the mixture thickens slightly to a pourable but foamy consistency — about 30 to 45 seconds. Do not whip to stiff peaks; it should flow slowly.

Stir 4 tbsp honeydew melon syrup (or blended fresh honeydew with sugar) into 2 cups cooled brewed green tea (cooled) until fully combined. Taste and add more syrup if you prefer a sweeter base.

Fill two glasses with as needed ice cubes and divide the honeydew tea evenly between the glasses.

Slowly pour the sea salt cream over the back of a spoon onto each drink to create a floating cream layer.
