Sekerpare
A classic Turkish dessert featuring tender semolina cookies topped with whole almonds and soaked in lemon syrup.
Ingredients
- 2 cups granulated sugar
- 2.5 cups water
- 1 tbsp lemon juice
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar, sifted
- 2 large eggs
- 1/2 cup fine semolina
- 1.5 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 16 blanched almonds

Combine 2 cups granulated sugar, 2.5 cups water, and 1 tbsp lemon juice in a saucepan over medium heat, boil for 10 minutes, then remove from heat and cool completely.

Preheat oven to 350 degrees F and lightly grease a rimmed baking sheet.

In a mixing bowl, cream together 1/2 cup softened unsalted butter and 1/4 cup sifted powdered sugar until smooth and light.

Mix in 2 large eggs and 1 tsp vanilla extract until well combined.

Add 1/2 cup fine semolina, 1.5 cups all-purpose flour, and 1 tsp baking powder, stirring until a soft dough forms.

Divide dough into smooth round balls, place on the prepared sheet, and press 16 blanched almonds into the centers.

Bake for 22 to 25 minutes until golden brown.

Pour the cooled syrup over the hot cookies right out of the oven and let sit for 2 hours to absorb fully.
