Salty Plum Iced Green Tea
A refreshing Taiwanese drink balancing the grassy sweetness of green tea with the tangy, umami punch of preserved salty plums served over ice.
Ingredients
- 2 cups brewed green tea (such as jasmine or sencha), cooled
- 4 preserved salty plums (li hing mui, available at Asian grocery stores), pitted
- 2 tbsp simple syrup or honey
- 2 tsp fresh lemon juice
- 2 cups ice cubes

Place 4 pitted preserved salty plums (li hing mui, available at Asian grocery stores) in each serving glass. Using the back of a spoon, lightly crush them to release their juices.

Add 2 tbsp simple syrup or honey and 2 tsp fresh lemon juice to each glass and stir to combine with the plum liquid.

Fill each glass with 2 cups ice cubes.

Pour 2 cups brewed green tea (such as jasmine or sencha), cooled over the ice. Stir gently and taste, adjusting sweetness or sourness as desired.

Serve immediately. Leave the plums in the glass for guests to nibble as they drink.
