Mayhaw Jelly Tart
A crisp butter pastry shell filled with vibrant southern mayhaw jelly. This classic dessert balances sweet and tart fruit flavors with a delicate crust.
Ingredients
- 2 cups all-purpose flour
- 1 cup unsalted butter, chilled and cubed
- 2 tbsp granulated sugar
- 1/2 tsp salt
- 1/4 cup ice water
- 1.5 cups mayhaw jelly
- 2 tsp fresh lemon juice
- 2 tsp cornstarch

Pulse 2 cups all-purpose flour, 2 tbsp granulated sugar, and 1/2 tsp salt in a food processor until combined.

Add 1 cup chilled and cubed unsalted butter and pulse until the mixture resembles coarse crumbs.

Drizzle in 1/4 cup ice water slowly while pulsing until a firm dough forms.

Press dough into a tart pan, prick the bottom with a fork, and bake at 375F for 15 minutes until lightly golden.

In a saucepan over low heat, whisk together 1.5 cups mayhaw jelly, 2 tsp fresh lemon juice, and 2 tsp cornstarch until melted and smooth.
