Smothered Green Beans
Fresh green beans braised until tender in broth with crisp bacon, onions, and Cajun seasonings.
Ingredients
- 4 slices thick-cut bacon, chopped
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 1.5 lbs fresh green beans, trimmed
- 1 cup chicken broth
- 1 tsp Cajun seasoning

Render 4 slices chopped thick-cut bacon in a deep skillet over medium heat for 6 to 8 minutes until crisp and cooked to an internal temperature of 145F.

Remove cooked bacon with a slotted spoon and set aside, leaving rendered fat in skillet.

Add 1 medium diced yellow onion and 3 minced garlic cloves to hot fat and cook for 4 minutes until softened.

Stir in 1.5 lbs trimmed fresh green beans, 1 cup chicken broth, and 1 tsp Cajun seasoning.

Cover pan, reduce heat to low, and simmer for 25 to 30 minutes until green beans are tender.

Stir reserved crisp bacon back into green beans and serve warm.
