Traditional Polish cheesecake with a dense, creamy ricotta filling and crispy graham cracker crust, baked until golden. This iconic dessert is rich, slightly sweet, and often studded with raisins.
Ingredients
- 2 cup gluten-free graham cracker crumbs
- 6 tbsp butter, melted
- 2 lb whole milk ricotta cheese
- 8 oz cream cheese, softened
- 4 large eggs
- 1/2 cup sugar
- 1 tsp vanilla extract
- 0.25 tsp salt
- 1 cup sour cream
- 1/2 cup golden raisins

Preheat oven to 350°F. Grease a 9-inch springform pan.

Mix 2 cup gluten-free graham cracker crumbs with 6 tbsp melted butter until resembles wet sand. Press firmly into the bottom of the pan.

In a large bowl, beat 8 oz softened cream cheese until smooth and creamy.

Add 2 lb whole milk ricotta cheese and beat until well combined. Stir in 1 cup sour cream.

In a separate bowl, whisk together 4 large eggs and 1/2 cup sugar until light and fluffy.

Gently fold eggs mixture into ricotta mixture. Add 1 tsp vanilla extract and 0.25 tsp salt.

Fold in 1/2 cup golden raisins until evenly distributed.

Pour filling over crust, smoothing the top with a spatula.

Bake for 55 to 65 minutes until the edges are set but the center still jiggles slightly when shaken.
