Shurba Bil Zayt
A comforting North African soup made with aromatic spices, tender vegetables, chickpeas, and a generous pour of olive oil. Finished with fresh lemon juice and herbs for a bright, rich flavor.
Ingredients
- 1/4 cup extra virgin olive oil
- 1 yellow onion, diced
- 4 garlic cloves, minced
- 2 celery stalks, chopped
- 2 carrots, diced
- 2 tbsp tomato paste
- 1 tsp ground coriander
- 1/2 tsp ground caraway
- 4 cups vegetable broth
- 1 can canned chickpeas, drained
- 1/2 cup orzo pasta
- 2 tbsp fresh lemon juice
- 1/4 cup fresh parsley, chopped

Heat 1/4 cup extra virgin olive oil in a large pot over medium heat.

Add 1 diced yellow onion, 2 diced carrots, and 2 chopped celery stalks, sautéing for 6 minutes until vegetables soften.

Stir in 4 minced garlic cloves, 2 tbsp tomato paste, 1 tsp ground coriander, and 1/2 tsp ground caraway, cooking for 1 minute until fragrant.

Pour in 4 cups vegetable broth and add 1 can drained canned chickpeas, bringing the mixture to a boil.

Reduce heat to low, stir in 1/2 cup orzo pasta, and simmer uncovered for 10 minutes until pasta is tender.
