  • 4 oz smoked salmon, torn into pieces
  • 4 oz cream cheese, softened
  • 2 tbsp fresh dill, finely chopped
  • 2 tbsp capers, drained
  • 2 tsp fresh lemon juice
  • 1/2 tsp lemon zest
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper, freshly ground
  • 2 tbsp red onion, very finely minced

    In a small bowl, beat 4 oz softened cream cheese with 2 tsp fresh lemon juice, 1/2 tsp lemon zest, half the 2 tbsp finely chopped fresh dill, 1/4 tsp kosher salt, and 1/4 tsp freshly ground black pepper until smooth and spreadable.

    Arrange 2 medium sliced 1/4-inch thick English cucumber slices in a single layer on a serving platter. Pat them dry with paper towels.

    Spoon or pipe about 1 teaspoon of the herbed cream cheese onto each cucumber round.

    Drape a piece of 4 oz torn into pieces smoked salmon over the cream cheese. Top each bite with a 2 tbsp drained capers caper, a sprig of the remaining dill, and a tiny pinch of 2 tbsp very finely minced red onion.
